One of the best things to do with leftover rice is to make fried rice. Fried rice is probably one of the easiest meals to make and you only need a few ingredients to make it for yourself or your family.
So let's jump into making this delicious dish.
Here's what you'll need:
1/2 of a medium onion diced
2 - 3 scallions thinly sliced
2 cloves of garlic diced
3 - 4 cups of leftover rice
1 med parcel of shrimp
2 medium to large eggs
3/4 cup of mixed vegetables (carrots, corn, and green peas)
pinch of salt
sprinkle of black pepper/ cayenne pepper
3 - 4 tablespoon of soy sauce
1. In a large skillet add butter or preferred oil, then add onions, garlic, and scallion, and then sauté for a few minutes.
2. Then add mixed vegetables and seasoned shrimp to the skillet and cook for 2- 3 minutes.
3. Next move vegetables and shrimp to one side of the skillet, add eggs and cook to scramble.
4. Then add rice, a pinch of salt, black or cayenne pepper, and a drizzle of soy sauce then stir to combine all ingredients.
5. Lastly serve and enjoy
